After tasting fish tacos on a trip to Mexico, Ralph Rubio and his father, Ray, launched their first restaurant in 1983 and introduced diners to the dish. Rubio's Fresh Mexican Grill has grown into a chain of more than 200 restaurants throughout the U.S. The specialty fish tacos are prepared with wild Alaska pollock, beer battered by hand, cooked to crispy perfection and topped with fresh cabbage, mild salsa and their original white sauce. This restaurant located at Foothill Ranch Towne Centre offers indoor dining an outdoor heated patio and catering services.
